I said that I wasn’t going to post anymore recipes on the site however a reader requested a quick and easy recipe for blueberry bread. Below are my two favorites. Find the recipes by clicking their names. And I promise to keep the recipes at a minimum. :)
Alabama Blueberry Bread
This is everyone’s favorite. I’ve used it several times for bake sales, gatherings, and even gift jars (save the wet ingredients). It’s extremely easy and the dry ingredients can be mixed well in advance…which helps for those of us with busy schedules. People will think you know how to bake! Suckers!!
Quick note: You can replace the wet lemon extract with Penzey’s lemon powder if you can find it…it’s worth it. Also, add a teaspoon of vanilla or vanilla nut extract. They can also be made into muffins...which Greg loves because he can eat them on the train without looking like an idiot. Frozen berries are okay—be sure to pat them dry. Rough cropped pecans are better than crushed walnuts or pecans…too fine a chop will cause the bread sink in the middle. Don’t ask how I know this. *smh*

I’ve made this one a couple of times. It’s actually a recipe from Pillsbury Bake-Off Dessert Cookbook with a few tweaks added. This bread comes out more like a sheet cake rather than a loaf so if you’re doing a bake sale or just want to disprove your worthlessness as a baker to your friends and family, this one may not be the one for you. A loaf shape gives the illusion credence whereas the sheet cake look makes it seem like you've failed once again.
That’s it! Give it a go. Now back to your regularly scheduled orgy. :)

You're welcome, Judy. We go to those pick-your-own farms and always over do it because BC’s excitement around nature is infectious. Mind you, we have a huge garden/orchard of our own. But I guess it’s more about the hayrides and being around other kids also.
Don’t get me started on the apple and peach picking. I’ve never baked so much in all my life!! |

Hi Chelsea. Yes you can use your frozen berries just be sure to pat them dry. Below are a couple of places to order lemon powder or lemon peel powder. Be sure to pop it in the frig after you opening. Citrus powders can go bad if left out. Also check your markets...they may carry it.

Blueberry bread is addictive. My guys can wipe out four batches overnight. It's gotten to the place where I have to make BC his own tiny loaf. lol! |

Don't blame me just yet. I have plenty more to come. Greg and I was sorting out my recipes that I wanted to add to the subpage. Greg got so hungry that he left. lol!
I promised Olga that I wouldn't add the really difficult stuff. It'll be the easy recipes. My mom has a recipe for bread that takes seven days to make...it's good but damn! |
